The Salaverria family has been producing coffee in the northwest of El Salvador for almost 100 years. Their original farms and mill are just outside of the village of Concepción de Ataco at the northern end of the Ahuachapán-Ilamatepec mountain range. El Molino is a part of this farm group and a source of great pride for the family.

While the Salaverria family has been producing beautiful coffees following traditional processing methods for generations, this coffee represents their innovative spirit. Instead of washing off the fruit and sticky mucilage, they wanted to experiment with natural processing, or drying the coffee inside the fruit. When drying coffee this way, it is necessary to turn it often, usually every 45 minutes, for the first 36–48 hours, to prevent over-fermentation. This attention and care comes through in the cup quality.

The result is a unique, complex coffee. Compared to washed coffees from this region, El Molino has more body and sweetness, with a warmer acidity and beautiful berry aromatics. truck.jpgturnout.jpgturnclose.jpgmill.jpg

Coarser (Percolator):

Select this option to receive coffee ground for percolator or other similar brewing devices.

Medium (Auto-drip):

Select this option to receive coffee ground for flat-bottom filters, such as those used on automatic coffee makers or Kalita Wave brewers.

Finer (Cone Filter):
