Located in the dry southwestern hills of Honduras, Las Capucas is the model of a well run Cooperative. Their official name, Cooperativa Cafetelera Capucas Limitada or COCAFCAL, is quite a mouthful, so we decided to pay homage to the whole community by calling this coffee simply "Capucas". The cooperative, run by Omar Rodriguez, utilizes modern washing and drying facilities to produce this fantastic coffee.
The town of Capucas is home to just over 80 families who produce coffee. Throughout town, coffee plantations border small homes, with vegetable gardens and chickens loose in the yard. Many of the farmers also have small “micro-mills” to process their coffees, and then sell through the coop. The farmers here take great pride in their coffee plantations. They discussed with gusto different pruning techniques, processing experiments, and which varieties planted can produce the best coffees. This lot of coffee is blended from various small family farms throughout the community, and we are excited to share the work the families of Capucas have done.
This year’s crop is a fantastic example of the improvements that have been made community-wide. Focusing on ripe cherry selection and micro-mill processing control have had a tremendously positive impact on the quality of the coffee. The farmers in Capucas have also obtained Organic, Fair Trade, and Rainforest certifications to reflect their commitment to their environment, and a fair social ethic.
This coffee is certified USDA Organic, meaning its production did not involve the use of synthetic substances such as most pesticides, herbicides and fertilizers.
Available for limited times in small quantities, our carefully curated micro-lots are single origin coffees at their purest. Not only are the beans sourced from one farm, they're sourced from one micro-lot of land on that farm, ensuring a highly consistent flavor and experience. This is a wonderful way to sample the true, amazing potential of coffee. We've selected these lots despite their small quantity because we see something in them that's truly special--and we think you will, too.
